Pazzo Marco Creamery

We were incredibly fortunate to have the opportunity to purchase all of our cheesemaking equipment from Marco Moramarco and Paul Vierra, who were retiring and closing down their gelato and cheese creamery, Pazzo Marco Creamery, in Gualala, CA.​

Initially going to pick up their pasteurizer vat and cheese press, we left with absolutely everything we needed to start our business: a stainless steel sink, a dishwasher, cheese molds, a cooling system, aging shelves, soap and paper towel dispensers… and lots and lots of great advice and encouragements!

In 2014, Marco and Paul made a bold leap from the SF tech industry to the world of gelato making in the remote forests of Northern California - which inspired the name of their Creamery: “pazzo” means crazy in Italian. Marco and Paul committed themselves to crafting the finest dairy products imaginable, embracing a truly small-batch approach.

They made rich and creamy gelato with many creative flavors and absolutely no  additives, and later expanded into cheesemaking, with the support of their community pooling together to surprise them with the purchase of a state-of-the-art cheese vat - which is why they named one of their cheese “L'Amitié” (friendship). After years of dedication and love poured into their craft, Marco and Paul made the decision to retire in 2022 and move to Washington State.

 

We are so very honored to carry on their legacy, and infinitely grateful for their continuous support! Thank you Marco and Paul!
